#432 – Grab

For some reason I have a hard time making brownies. It always gets a crust around the edges and stays soggy in the center. I still eat them… but usually with a spoon.

    I don’t know I don’t bake, in either sense of the word.

    Cook the brownies slower at a lower temperature to have it cook more evenly.

    My wife makes killer brownies. They’ll do a lot worse than grab you, if you approach before they’ve cooled off…

    How much of Biff’s larder is so hostile that it needs to cool down before it can be approached, anyway?

    HAHA! That’s exactly what its like!! I mean, you’re starving, but you really want those fresh brownies, so you’re hoovering over the pan until finally your stomach convinces your mind that it MUST be cool, so you quickly shovel a fat spoonful in and it sticks to the roof of your mouth and you’re just left there squealing in happy chocolate and burny pain. . .
    Oh yes. That’s EXACTLY what its like.

    It sounds like your oven is to hot. The metal in the brownie pan is a better conductor of heat than the air, so its overcooking the edges while the inside remains undercooked.
    If a lower heat doesn’t help, you might try making the brownies in a muffin or cupcake pan. The smaller size will help them cook more evenly (plus no cutting).

    Wow, that looks like something that would happen if I tried to cook. I can’t even use the microwave, let alone a full-fledged oven… I somehow managed to set my re-heated cheese steak on fire. Luckily, the sink was closer than my pair of hammers, and the kitchen was clear of all wildlife. 🙂

    You need to rotate the pan once or twice during the cooking process. And possibly clean your oven, otherwise it’ll have cool spots and hot spots.

    Well the worst that’s happened to me grabbing a brownie before letting it cool is burnt fingers, so I’d imagine Biff has a big red mark where the brownie grabbed him… ouch.

    My biggest problem with brownies is that I always get impatient and put the icing on before they’re entirely cooled … then the icing ends up melting and running all over the place.

    It sounds as if your brownie problem could be solved by cooking the brownies for longer, at a lower temperature. And you should always make sure that the oven rack is in the middle of the oven to ensure even heating.

    Biff’s brownie problem, on the other hand, can probably only be solved with a bigger knife.

    Lower the temperature for cooking the brownies and stick an empty pan below the brownies on the lower rack. This will make them cook more evenly.

    Don’t use a glass pan – I had the same problem with hard edges and gooey middle until I finally bought a professional grade square aluminum pan (Nordic Ware) at a discount home wares store (Home Goods if you have those where you are). I call it the Magic Brownie Pan because it makes them perfect every time.

    Then again, I know baked good when I see them. That brownie is awfully mean.

    Hmm… brownies are one of the only things I’ve ever actually made o.0 and they’ve turned out fine. I use the boxed kind… were you using home made batter? That might be harder… but yeah… mine turn a bit hard and crusty around the four corners. But the rest is quite delectable. I actually added a peanut butter layer to one batch I made and that went well too

    Lemme give you a little tip. Get a wooden toothpick, and stick it in the center. If any little wet batter comes up, let it cook longer.

    ou….theres this one recipe for brownies I know, you put choclate chips in the stuff, somehow you make it hot enough to make the stuff bake or whatever, and the choclate chips don’t melt.
